For us who live in the Philippines, we have easy access to pandesal anytime of the day. Even in the dead of night, in fact, as there are bakeries that are open 24 hours a day. But for many Filipinos who grew up here but have migrated elsewhere, the craving for pandesal is hard to satisfy because it is not a staple in bakeries abroad. The most logical solution, of course, is to bake pandesal at home.

These spicy burgers make a great addition if you are grilling outside, or simply for a family meal. The cumin and garlic give the beef a substantial boost in flavor and make them a popular choice. If you are keen to cook in batches, these burgers can be frozen uncooked and kept for another day. If you are freezing these it is a good idea to separate them with sheets of greaseproof paper first so that you can divide them more easily.

How I cooked this: Heated 1 Tbsp butter in a pot that I could cover later browned 2 chicken breasts on both sides in the butter. After browning I cut the chicken into smaller pieces to cook faster. I grew up here in the US and I’ve always want to make sure that I keep up with my Pilipino culture and one way to do that is master the ways of Filipino cooking. This is my recipe submission and of course I love this dish having grown up eating this at my mother's table. It is definitely rich and not for the calorie counters! I can see why some call it a greasy dish as it uses skin-on chicken in addition to rich creamy coconut milk. If you prefer a lighter version (as my husband does) just use boneless skinless chicken breasts. This is one of my favorite filipino dishes. I do have Filipino ancestry but I grew up knowing my Chamorro Japanese customs & traditions, including the food. There are some similarity in Chamorro & Filipino dishes. I think it’s because of the Spanish influence. Anyhow, I started to learn to cook Filipino dishes and like I said this is one of my favorites, including pinakbet with pork and little shrimps. Thank you for sharing your history. I almost felt your sadness when you did not get the liver in your soup. Being a filipino, I share the same love of chicken liver and all sorts of liver for that matter. My children are eurasians and grew up in a mixed asian/european household. I could never impart them my love for the liver of any sort and felt sad in a way that they do not share my taste for it.
