This is one of my favorite filipino dishes. I do have Filipino ancestry but I grew up knowing my Chamorro Japanese customs & traditions, including the food. There are some similarity in Chamorro & Filipino dishes. I think it’s because of the Spanish influence. Anyhow, I started to learn to cook Filipino dishes and like I said this is one of my favorites, including pinakbet with pork and little shrimps. Thank you for sharing your history. I agree that cooking & the smell of a dish brings back happy & sad memories. I thank the Lord for this.
This recipe is a slant on a traditional Italian dish and makes great use of olives and garlic, two of Italy’s most common ingredients. Although this is a wonderful meal, you might be a little put off by the use of anchovies. Don’t panic! It is quite easy to use chopped bacon instead to add a bit of smokiness. You can also omit the chili flakes if you don’t like the heat.

But for many Filipinos who grew up here but have migrated elsewhere, the craving for pandesal is hard to satisfy because it is not a staple in bakeries abroad. The most logical solution, of course, is to bake pandesal at home.
This smoothie is so delicious that even kids will like it! Put this together in my dutch oven. I'm not a fan of dark meat and my family is only 3 people large so I made this with a pound of breast and only 1 can of coconut milk. Used the whole package of spinach and all suggested ginger for extra flavor. It was still too bland for me so I shook in a healthy amount of garlic powder and ground ginger at the end (and of course more salt). Served with brown rice and the family really enjoyed it. I almost felt your sadness when you did not get the liver in your soup. Being a filipino, I share the same love of chicken liver and all sorts of liver for that matter. My children are eurasians and grew up in a mixed asian/european household. I could never impart them my love for the liver of any sort and felt sad in a way that they do not share my taste for it. They can not even understand why I like liver, aside from liver pastej. I like your blogg very much. It is very well written and I enjoy your introductory stories in the beginning of the recipes.
