I almost felt your sadness when you did not get the liver in your soup. Being a filipino, I share the same love of chicken liver and all sorts of liver for that matter. My children are eurasians and grew up in a mixed asian/european household. I could never impart them my love for the liver of any sort and felt sad in a way that they do not share my taste for it. They can not even understand why I like liver, aside from liver pastej. I like your blogg very much. It is very well written and I enjoy your introductory stories in the beginning of the recipes. I am so glad that I discovered it. More power.

Why does my poop smell so bad


Heat the canola oil in a large skillet over medium heat and stir in the ginger slices. Cook and stir until fragrant and lightly browned. Remove ginger and set aside. Season chicken with salt and pepper. Place chicken in the same skillet over medium-high heat without crowding. Cook until chicken is lightly brown on all sides. Return the ginger to the skillet and add coconut milk. Bring to a boil, then cover the skillet with the lid tilted to allow steam to escape. Reduce heat to medium-low and simmer until the chicken is no longer pink at the bone, stirring occasionally, about 30 minutes.

I was five years old when my parents separated, and soon after, my father began another family. On one of the irregular occasions we did visit him, we~my brothers, my father, his new wife and his then 2-year old son~gathered around the table for a lunch of chicken tinola. In the Philippines, or at least in our household, all edible parts of the fowl~liver, gizzards, neck and all, are used in the soup. As there is only ONE liver in chicken and it is considered the most nutritious, it’s usually given to the precious child of the house. When my father started to ladle our portions of the soup, I reached out for my bowl with a certainty that only comes from the naivety of a child that THE liver was in mine. Instead, my father, cooing as he did, plopped the coveted piece into his boy’s. I was too young then to explain the onslaught of tears, to even understand what I was crying about. All I remember was the desperate need to be back home at my mother’s house; my mother’s house where I would have been the ONE with the liver in her bowl.
These spicy burgers make a great addition if you are grilling outside, or simply for a family meal. The cumin and garlic give the beef a substantial boost in flavor and make them a popular choice. If you are keen to cook in batches, these burgers can be frozen uncooked and kept for another day. If you are freezing these it is a good idea to separate them with sheets of greaseproof paper first so that you can divide them more easily.

For us who live in the Philippines, we have easy access to pandesal anytime of the day. Even in the dead of night, in fact, as there are bakeries that are open 24 hours a day. But for many Filipinos who grew up here but have migrated elsewhere, the craving for pandesal is hard to satisfy because it is not a staple in bakeries abroad. The most logical solution, of course, is to bake pandesal at home.
This recipe is a slant on a traditional Italian dish and makes great use of olives and garlic, two of Italy’s most common ingredients. Although this is a wonderful meal, you might be a little put off by the use of anchovies. Don’t panic! It is quite easy to use chopped bacon instead to add a bit of smokiness. This is one of my favorite filipino dishes. I do have Filipino ancestry but I grew up knowing my Chamorro Japanese customs & traditions, including the food. There are some similarity in Chamorro & Filipino dishes. I think it’s because of the Spanish influence. Anyhow, I started to learn to cook Filipino dishes and like I said this is one of my favorites, including pinakbet with pork and little shrimps. Thank you for sharing your history. I agree that cooking & the smell of a dish brings back happy & sad memories. I thank the Lord for this.
